Crab and Asparagus Soup
Makes 5 servings


1/2 lb (225 g) Luxury Crab Meat
2 tbsp (30 mL) vegetable oil
2 slices chopped fresh ginger
2 finely chopped shallots
1/2 lb (225 g) tofu, cubed
1/2 lb (225 g) asparagus, cut diagonally
4 cups (1 L) fish stock
2 tbsp (30 mL) cornstarch
4 tbsp (60 mL) cold water


Sauté ginger and shallots in oil for 30 seconds. Add Luxury Crab Meat and sauté 10 seconds more. Add fish broth and bring to boil. Add asparagus and tofu. Dilute cornstarch in cold water, then add to soup
